Cherry Jalapeno Thumbprint Cookies

My wife Amy was trying out new recipes for cookies and this one was a keeper. I was hesitant to try it at first, because it seemed like the jalapeno would over-power the flavor. But that was not the case. It just added to the cookie and really made a great alternative to all the traditional cookies. Of course any jam could be used, we just happened to have some Cherry Jalapeno jam from Door County. Try it out and see if you agree!
Recipe for Thumbprint Cookies:
Dough:
- 2 cups + 2 Tbsp flour
- ¼ tsp salt
- 1 cup COLD butter - diced
- 2/3 cup sugar
- 1/2 tsp almond extract
- Cream together butter and sugar until well blended
- Add extract
- Add flour and salt (it will look dry but will soften up when shaping)
Make 1” round balls then press with thumb to indent
Fill indent with a jam (I used Cherry Jalapeno Jam, but it can be any jam.)
Freeze for 10 minutes (if you don’t they will spread out and lose shape.)
Bake at 350 degrees for 14-16 minutes. Let them cool and top with glaze drizzle.
Glaze Drizzle:
- Powder sugar
- A little milk
- Almond extract
